QUINOA PISTACHIO BARS – (Serves – 4)
½ cup roasted quinoa
¼ cup roasted crushed pistachios
1 cups seeded dates
1 tablespoon honey
2-3 tablespoons dark chocolate chips
A pinch salt
Oil for greasing
1. Coarsely grind dates in an electric food processor and transfer in a bowl.
2. Add honey, pistachios, quinoa, chocolate chips and mix. Add salt and mix well.
3. Grease a barfi tray with some oil, transfer the date-quinoa mixture in it and level it out. Refrigerate for 1 hour.
4. Cut into 1 inch thick pieces and demould.Serve.
